Meatball-Stuffed Cabbage is so good, and so easy, that there's no reason to reserve it just for special occasions. This makes a hearty warm-you-up main dish and a great appetizer, too!

What You'll Need

  • 1 pound ground beef
  • 1/3 cup dry bread crumbs
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 head green cabbage, shredded (12 to 14 cups)
  • 1 (14-ounce) can whole-berry cranberry sauce
  • 1 (28-ounce) jar light spaghetti sauce
  • 1 tablespoon lemon juice
  • 5 gingersnap cookies, crumbled

What to Do

  1. In a medium bowl, combine the ground beef, bread crumbs, egg, salt, and pepper. Using about 1 tablespoon of the mixture for each, form the mixture into 1-inch meatballs.

  2. Place half of the shredded cabbage in a large pot, then add the meatballs. Spoon the cranberry sauce over the meatballs, then add the remaining cabbage. Pour the spaghetti sauce over the mixture; DO NOT STIR.

  3. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 20 minutes. Stir gently, being careful not to break up the meatballs. Simmer for 25 more minutes.

  4. Add the lemon juice and cookie crumbs; mix well, and simmer for 15 more minutes.

Why do I see only zeros in the nutritional information?

Could you make it with turkey instead of ground beef?

Absolutely! We do suggest adding a little onion powder or garlic powder to the meat, since turkey tends to be more bland than ground beef. Enjoy!

The important number is the 27 grams of CARBS. The sugar and fiber listings in the unbolded letters simply identifies where part of the 27 grams of carbs came from. Note that the % of daily intake for a 2000 calorie day is "0". That's because that figure is included in the 9% daily amount of the bold lettered Total Carbohydrates as is the Sugar and Fiber. It seems to me that a main dish of only 27 grams of carbs is pretty darned good.

I would change out the canned cranberry sauce and spaghetti sauce and make my own that is sugar free or at the very least reduced and without all those preservatives. Happy cooking!!

All of our recipes adhere to the ADA's nutrition guidelines, which recommend less than 60g of carbs per meal. If you ate this for dinner with a helping of healthy green vegetables, you would have a balanced meal that falls well within the ADA standards.
