If you've never made a roast before, don't worry! It doesn't get much easier than this Slow-and-Easy Roast. With lots of flavorful additions, this recipe is foolproof!

What You'll Need

  • 1 tablespoon canola oil
  • 1 (2-pound) beef bottom round roast
  • 2 onions, chopped
  • 1 carrot, chopped
  • 3 cloves garlic, chopped
  • 1/2 pound mushrooms, sliced
  • 2 (14-ounce) cans diced tomatoes
  • 1 bay leaf*
  • 1 teaspoon dried oregano*
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

What to Do

  1. In a soup pot, heat the oil over medium-high heat. Add the roast; cook for 5 to 6 minutes, until brown on all sides. Remove the roast; set aside.

  2. Add the onions, carrot, and garlic to the pot; sauté for 4 minutes.

  3. Add the mushrooms; cook for 2 to 3 more minutes, or until the vegetables are tender.

  4. Return the roast to the pot. Add the remaining ingredients, cover, and reduce the heat to low. Cook for 1-1/2 hours, or until the beef is tender, stirring occasionally. Remove the bay leaf, slice, and serve the roast topped with sauce and vegetables.

This recipe calls for 12 teaspoons of black pepper which seems like a lot of pepper to me. Is this correct or should it be 1-2 teaspoons or 1/2 teaspoon? I won't make this until my question is answered.
