What You'll Need

  • 2 tablespoons olive oil
  • 2 tablespoons light soy sauce*
  • 1 tablespoon honey
  • 1 tablespoon grated fresh ginger
  • 3 cloves garlic, chopped
  • 2 pork tenderloins (about 2 pounds total)
  • 1 tablespoon peanut oil

What to Do

  1. In a resealable plastic storage bag or shallow dish, combine the olive oil, soy sauce, honey, ginger, and garlic; add the tenderloins. Seal the bag or cover the dish and marinate the tenderloins in the refrigerator for 30 minutes, turning occasionally.

  2. In a large skillet, heat the peanut oil over medium heat. Place the tenderloins in the skillet, reserving the marinade. Cook for 12 to 15 minutes, or until medium doneness, turning to brown all sides.

  3. Meanwhile, in a small saucepan, bring the reserved marinade to a boil over high heat; let boil for 5 minutes. Slice the tenderloin and serve topped with the sauce.

This sounds really delicious. I am not a big fan of ginger, but in the right combination it is really good. I like that the dish uses the spices in a marinade before cooking. I think that helps get the flavor into the meat a little more than just baking or roasting the pork with spices added in at that time. Great idea for those nights when you don't want the same old dish.

Pretty good. different

Could you cook this in the oven or in a slow cooker?

Hi ssuch! Great question! Yes! You can cook this dish in the oven at 350 degrees for 25 -30 minutes or desired done-ness. It could also be cooked in a slow cooker, but we have not tested this just yet, so monitor your cook time if you choose to utilize a slow cooker in the meantime. Whichever way you decide to cook it, we'd love to hear your feedback!
