There's plenty of reasons to rejoice about our Italian Steak & Veggies! Since it's full of healthy vegetables it fits our diabetes regimen perfectly.

What You'll Need

  • 1 tablespoon canola oil
  • 1 onion, cut in strips
  • 1/2 red bell pepper, cut in strips
  • 1/2 green bell pepper, cut in strips
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound beef cubed steaks
  • 1 (14-1/2-ounce) can diced tomatoes, no salt added

What to Do

  1. In a large skillet, heat oil over medium-high heat. Cook the peppers, onion, garlic powder, Italian seasoning, salt and pepper for 5 minutes. Remove to a plate and set aside. 
     
  2. Add the cube steaks to the same skillet and cook 5 to 7 minutes, or until browned, turning once. 
     
  3. Add the tomatoes to the skillet . Bring to a boil, reduce heat to low, and simmer for 20-25 minutes or until meat is tender.

When do you add the veggies and spices back to the recipe?

I changed the oil to coconut oil and added some yellow bell pepper and a little bit of slivered carrots for color
