Lime-Kissed Chicken Breasts

Our baked Lime-Kissed Chicken Breasts get their full-flavor from a homemade marinade we make from lots of healthy ingredients. This one is super easy for a family meal… as well as being a great one for company too!

What You'll Need

  • 1/3 cup reduced-sodium soy sauce
  • 1/2 teaspoon finely grated lime peel
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground ginger
  • 3 tablespoons water
  • 4 (4-ounce) boneless, skinless chicken breast halves

What to Do

  1. In a small saucepan, combine soy sauce, lime peel, lime juice, ginger, and water; boil mixture 1 minute. Cool marinade to room temperature.

  2. Pour cooled marinade over chicken breasts. Cover and refrigerate several hours.

  3. When ready to bake, preheat oven to 350 degrees F. Coat a baking dish with cooking spray. Pour off marinade and discard.

  4. Cover and bake chicken in prepared baking dish 45 minutes, or until chicken is tender and juices run clear. Turn oven to broil, uncover, and brown chicken breasts 5 minutes per side.
