This easy Marinated French Chicken dish really cuts the mustard when it comes to being a healthy diabetes recipe. You can feel good about all the ingredients, and expect it to taste simply delicious!

What You'll Need

  • 1/2 cup bottled marinade for chicken, divided
  • 3 tablespoons Dijon-style mustard
  • 2 tablespoons olive oil
  • 4 (4-ounce) boneless skinless chicken breast halves

What to Do

  1. In a small bowl, combine marinade, mustard, and olive oil; mix well.

  2. Place chicken in resealable plastic bag; add 1/4 cup marinade mixture, seal, and refrigerate at least 1 hour. Store remaining marinade in refrigerator until ready to use for basting.

  3. Preheat oven to broil. Line a baking sheet with foil and coat with cooking spray. Remove chicken from plastic bag and discard excess marinade in bag.

  4. Broil chicken until no longer pink, basting with reserved marinade.

These are also great on the grill, if you feel like firing it up.
