The fresh veggies really bring out the flavor of Nicole's Famous Chicken, and no matter what name you go by, we're sure you'll perfect this mouthwatering recipe.

What You'll Need

  • 2 teaspoons canola oil
  • 4 (4-ounce) boneless, skinless chicken breast halves
  • 1/2 pound fresh mushrooms, sliced
  • 1 medium green bell pepper, chopped
  • 1/2 small onion, minced
  • 1 (10-3/4-ounce) can condensed reduced-fat cream of mushroom soup
  • 1/4 cup water
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon black pepper

What to Do

  1. In a large skillet heat oil over medium heat.
     
  2. Add the chicken, mushrooms, pepper, and onion to the skillet; cook the chicken for 5 minutes per side while sautéing the vegetables.
     
  3. Add the remaining ingredients; reduce the heat to medium-low, cover, and cook 10 minutes, or until no pink remains in the chicken. Serve the chicken topped with the sauce.

I made this for the first time. Very good! I tripled the recipe so we would have leftovers. I plan to serve over rice tomorrow.

Thanks for the OK on low sodium & mushrooms, I bought no salt mushroom pieces & using boneless, skinless chicken thighs - 1 lb. will make this tonight & be back to rate it. Thanks again

Can I use low sodium cream of mushroom soup & a jar of mushrooms not fresh? On diaylsis & have to watch my sodium. Sounds delicious.
