Nicole's Famous Chicken

What You'll Need:
  • 4 (4-ounce) boneless, skinless chicken breast halves
  • 1/2 pound fresh mushrooms, sliced
  • 1 medium green bell pepper, chopped
  • 1/2 small onion, minced
  • 1 (10-3/4-ounce) can condensed reduced-fat cream of mushroom soup
What To Do:
  1. Coat a large skillet with nonstick cooking spray and heat over medium heat.

  2. Add the chicken, mushrooms, pepper, and onion to the skillet; brown the chicken for 3 minutes per side while sautéing the vegetables.

  3. Add the soup; reduce the heat to medium-low, cover, and cook until no pink remains in the chicken, and the sauce is bubbly. Serve the chicken topped with the sauce.
