If you like cookies that are soft and chewy, then you'll love our Banana Bread Cookies. These homemade cookies are great for snacking on or serving up after dinner. We like to wash them down with a small glass of milk.

What You'll Need

  • 1 stick (1/2 cup) margarine, softened
  • 3/4 cup firmly packed light brown sugar
  • 2 large ripe bananas, mashed (about 1 cup)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cup white wheat flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts

What to Do

  1. Preheat oven to 350 degrees F. Coat baking sheets with cooking spray.
  2. In a large bowl, beat margarine and sugar until fluffy. Add bananas, eggs, and vanilla; mix until creamy. Add flour, cinnamon, baking soda, and salt; mix well. Stir in nuts. Drop by heaping teaspoonfuls on baking sheets.
  3. Bake 10 to 12 minutes, or until lightly browned around edges. Let cool 2 minutes, then remove to wire racks to cool completely.

How are these diabetic friendly .br /Margarine, sugar, ripe bananas, white wheat flour.br /Just because its wheat flour doesnt make it right (combined with all purpose)br /Margarine is worse than butter even.br /And, ripe bananas have to much natural sugars in them.br /What are the nutrition values for these cookies.br /I see a bad trend on this diabetic cookbook sweet website, a lot of the recipes will harm any diabetic or pre-diabetic.br /If I am wrong, I apologize.br /But please respond to this one for all of us.br /Thank you
