Because we keep Lemon Italian Ice frozen, we can pull it out whenever we need a refreshing snack. Serve it up at your next backyard bash, poolside, or as a light after-school or anytime pick-me-up.

What You'll Need

  • 2 cups water
  • 3/4 cup fresh lemon juice
  • 3/4 cup sugar
  • 2 teaspoons grated lemon peel

What to Do

  1. In a medium saucepan, combine all the ingredients. Bring to a boil over medium heat, stirring constantly. Remove from the heat and allow to cool for 5 minutes.

  2. Pour the mixture into 2 ice cube trays. Cover and freeze overnight.

  3. Remove frozen mixture from the trays and pulse in a food processor or blender for 2 to 3 minutes, or until the consistency is thick and creamy. Serve, or cover and freeze until ready to serve.

  4. Makes 9 servings at a 1/3 cup serving size.

Is there another way to finish this if you don't own a blender or food processor? Sure hope so.

Yes! Here's an alternate way: Put the mixture into a bowl or 8x8 pan and freeze it that way, instead of in ice cube trays. When the mixture is frozen, scrape with two forks to make a slushy consistency. Your biceps will be burning, but it will be worth it! Enjoy!
