Our Mr. Food Test Kitchen wants you to add a ray of sunshine to your mealtime routine with this refreshing citrusy Sunshine Salad that'll get a seal of approval from anyone looking to eat right.

What You'll Need

  • 2 large navel oranges, peeled, sliced, and cut into quarters
  • 1/2 red onion, thinly sliced
  • 6 cups romaine or leaf lettuce, chopped
  • 1/4 cup low-fat balsamic vinaigrette
  • 2 tablespoons sliced almonds

What to Do

  1. In a bowl, place lettuce, oranges, and onion.
  2. Toss with dressing and sprinkle with almonds and serve.

I make this salad especially during warmer months. It makes a great addition to a garden party or BBQ. Sometimes I substitute quartered strawberries for the oranges. Adding seeds like sunflower or pumpkin works well. Poppy seed dressing can easily be substituted for balsamic vinaigrette for a taste alternative.

Sounds delicious but since I cannot have lettuce in my diet, I can't make it. Sure wish I could.
