Mediterranean Grilled Lamb Chops

Bright flavors bring our Mediterranean Grilled Lamb Chops to life. Paired with an eggplant salad, you'll feel like the picture of health after indulging in these delicious flavors.

What You'll Need:
  • 1 (1-pound) eggplant, peeled and sliced into 1/4-inch slices
  • 1 red onion, sliced into 1/4-inch slices
  • Cooking spray
  • 1 tablespoon olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1 1/2 pound loin lamb chops, (about 8) well-trimmed
What To Do:
  1. Preheat grill to medium-high.
     
  2. Coat both sides of eggplant and onion slices with cooking spray. Grill vegetables 2 to 3 minutes, turning once, until browned on both sides. Transfer to a cutting board and let cool slightly. Chop and combine in a medium bowl with oil, lemon juice, mint, parsley, 1/2 teaspoon salt, and cayenne. Set aside.
     
  3. Meanwhile, sprinkle lamb with black pepper and the reamining salt. Grill chops about 4 minutes per side, or until browned on both sides and cooked to desired doneness. Serve with eggplant salad.
