You can't get more Italian than mussels, tomatoes, and spaghetti. This dish is an Italian classic, bursting with rich, traditional flavors but all within the rules of a diabetes diet.

What You'll Need

  • 12 ounces low-carb spaghetti
  • 2 pounds fresh mussels, cleaned (see Note)
  • 1 (14-ounce) can no-salt-added stewed tomatoes
  • 1/4 cup dry white wine
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. Prepare the spaghetti according to the package directions; drain.

  2. Meanwhile, in a soup pot, combine the remaining ingredients over high heat; bring to a boil. Reduce the heat to low, cover, and cook for 2 to 3 minutes, or until the mussels open.

  3. Serve the spaghetti in bowls topped with the mussels pomodoro. Discard any unopened mussels.

Notes

If you buy mussels that aren't cleaned and ready for cooking, here's what to do: Wash them under cold running water and scrub away any grit or barnacles with a stiff food scrub brush. Remove the black "beard" from each mussel by cutting or pulling it off.
