Mussels Pomodoro

You can't get more Italian than mussels, tomatoes, and spaghetti. This dish is an Italian classic, bursting with rich, traditional flavors but all within the rules of a diabetes diet.
What You'll Need
- 12 ounces low-carb spaghetti
- 2 pounds fresh mussels, cleaned (see Note)
- 1 (14-ounce) can no-salt-added stewed tomatoes
- 1/4 cup dry white wine
- 2 garlic cloves, minced
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- Prepare the spaghetti according to the package directions; drain.
- Meanwhile, in a soup pot, combine the remaining ingredients over high heat; bring to a boil. Reduce the heat to low, cover, and cook for 2 to 3 minutes, or until the mussels open.
- Serve the spaghetti in bowls topped with the mussels pomodoro. Discard any unopened mussels.
Notes
If you buy mussels that aren't cleaned and ready for cooking, here's what to do: Wash them under cold running water and scrub away any grit or barnacles with a stiff food scrub brush. Remove the black "beard" from each mussel by cutting or pulling it off.
