Pork loin is perfect for almost any meal plan - including ones low in carbs, like our Italian Pork Roast. And it's really versatile, because we can serve it up as an easy, weeknight supper or an elegant crowd-pleaser!

What You'll Need

  • 1/2 teaspoon dried oregano*
  • 1/2 teaspoon dried basil*
  • 1/2 teaspoon onion powder*
  • 1/2 teaspoon garlic powder*
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (2-pound) boneless center-cut pork loin, well trimmed

What to Do

  1. Preheat the oven to 375 degrees. Coat a roasting pan with cooking spray.*

  2. In a small bowl, combine the oregano, basil, onion powder, garlic powder, salt, and pepper. Rub the seasoning mixture into all sides of the pork roast and place in the roasting pan.

  3. Bake for 35 to 40 minutes, or until the juices run clear and the roast is cooked to the desired doneness. Slice and serve.

Notes

 

To make this a gluten-free recipe, use nonstick cooking spray with no flour added, and seasonings with no added starch from a gluten-containing source.

Would you suggest cutting slits in the top of the roast if you are going to cook it in the slow cooker, or would you just rub it in like the recipe says anyway? I think this dish would go great with some broccoli or a salad and a healthy fruit dessert for afterwards. Maybe a few of the cloud bread slices as a low-carb side to finish the meal out and give it a filling tone.

Hi there! The Test Kitchen does not recommend cutting slits into the roast because the moisture will escape and dry out the meat. Enjoy!

Hello! - Yes, you can cook this pork roast in your slow cooker. We suggest cooking for 3-1/2 to 4-1/2 hours on low heat, or until meat is no longer pink in the center. Enjoy!
