Take your taste buds down to the "Bayou" when you cook up our zesty Gulf Coast Shrimp. With just the right amount of spice, this diabetic main dish recipe will lure everyone to the table quick.

What You'll Need

  • 1 (12-ounce) package frozen chopped onion, bell peppers, celery, and parsley blend
  • 2 (8-ounce) cans no-salt tomato sauce
  • 1/2 cup water
  • 1/2 teaspoon Creole seasoning
  • 3/4 pound fresh medium shrimp, shelled and deveined, tails removed

What to Do

  1. Coat a medium nonstick skillet with cooking spray. Over medium high heat, cook vegetable mixture until tender, stirring occasionally.

  2. Add tomato sauce, water, and seasoning. Bring to a boil, reduce heat to low, and simmer about 5 minutes. Add shrimp and cook just until shrimp turns pink. Serve immediately.
