Forget the forks with this kid-friendly hands-on treat! Shrimp Salad Skewers are a sure way to beat the dinnertime rut, and can even be prepared in advance, meaning it takes no time to get from preparation to the table. And if you combine the dressing in the morning or earlier in the day, that'll help get this low-carb pleaser on the table even quicker.

What You'll Need

  • 1/2 cup light ranch dressing*
  • 2 teaspoons prepared horseradish
  • 8 (10-inch) wooden skewers
  • 1 head iceberg lettuce, cut into 16 wedges
  • 2 large tomatoes, each cut into 8 chunks
  • 16 cooked shrimp, peeled and deveined, with tails left on (about 3/4 pound)
  • 1 lemon, cut into 8 wedges

What to Do

  1. In a small bowl, combine the ranch dressing and horseradish; mix well, cover, and chill for 1 hour.

  2. Alternately thread each skewer with 2 wedges of lettuce, 2 tomato chunks, and 2 shrimp; finish each with a lemon wedge.

  3. Serve the kabobs drizzled with the dressing.
