What You'll Need:
cup chopped onion
cup chopped celery
1 (10-3/4-ounce) can Healthy Request Cream of Celery Soup
1 (12-ounce) can evaporated nonfat milk
2 cups diced unpeeled baked potatoes
2 tablespoons bacon bits
cup shredded reduced fat Cheddar cheese
teaspoon black pepper
What To Do:
- Coat a large saucepan with cooking spray. Over medium-high heat, saute onion and celery 5 minutes, or until tender.
- Add celery soup. evaporated skim milk, potatoes, and bacon bits; mix well to combine. Lower heat and simmer 10 minutes, stirring occasionally. Stir in Cheddar cheese and black pepper and continue to simmer 5 minutes, or until cheese is melted, stirring often.
- To make this Baked Potato Soup recipe gluten-free, use a gluten-free cream of celery soup.
