Light 'n' Hearty Pasta Sauce

A homemade pasta sauce that fits a diabetes diet can be challenging, but our Mr. Food Test Kitchen team came up with a winner with this Light 'n' Hearty Pasta Sauce. You're gonna love it!

What You'll Need

  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 pound ground turkey breast
  • 3 cups reduced sodium marinara sauce

What to Do

  1. Coat a large nonstick skillet with cooking spray. Over medium heat, cook garlic and mushrooms until tender, stirring occasionally. Remove from pan. Add turkey and cook until no longer pink, stirring occasionally.

  2. Add garlic-mushroom mixture and marinara sauce to skillet and bring to a boil. Reduce heat to low and simmer about 10 minutes, or until heated through.

Notes

To make your own marinara sauce, in a sprayed large pan over medium heat, cook 1 thawed (12-ounce) package frozen chopped onions, celery, peppers, and parsley blend and 2 minced garlic cloves, until tender. Add 2-1/2 cups no-salt tomato sauce and 2 teaspoons crushed Italian herb seasoning and bring to a boil. Reduce heat and simmer, covered, 10 to 15 minutes. Makes 3 cups.
