Cheesy Broiled Tomatoes

This recipe will earn you a "top tomato" award every time you make it! Our Cheesy Broiled Tomatoes boast the healthy benefits of ruby red tomatoes baked to perfection with a flavorful cheesy topping.

What You'll Need:
  • 4 firm, ripe tomatoes, cored and cut in half horizontally
  • 1/2 cup reduced-fat mayonnaise
  • 1 tablespoon grated Parmesan cheese
  • 4 scallions, finely chopped
What To Do:
  1. Preheat broiler. Line a baking sheet with aluminum foil; coat with cooking spray. Arrange tomatoes on prepared baking sheet.
     
  2. In a small bowl, mix mayonnaise, cheese, and scallion. Spread 1 tablespoon on each tomato half.
     
  3. Broil about 5 inches from heat for 5 to 7 minutes or until topping puffs and turns golden.
