You'll love our Classic Creamed Spinach made with lots of lighter and healthier diabetes-friendly ingredients. This one is so easy to make, yet it tastes like you fussed.

What You'll Need

  • 1 tablespoon margarine
  • 1 package (16-ounce) frozen chopped spinach, thawed and drained
  • 1 cup sliced fresh mushrooms
  • 1/4 cup reduced-fat whipped cream cheese
  • 2 tablespoons reduced-fat sour cream
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon nutmeg
  • 1/4 teaspoon black pepper

What to Do

  1. In a medium skillet, melt margarine over medium heat, cook mushrooms 3-5 minutes or until tender. Reduce heat to low, add remaining ingredients and cook until cheese is melted and creamy, stirring occasionally.

Made this last week. Everyone loved it. I used garlic powder in place of the onion powder and used Kerry Gold Irish butter instead of chemistry set margarine. Probably make again...

Why in the world does or would ANY body use margarine these days with all the news about how bad it is for you?! How about butter?! It's delicious and if you are vegan, then go with coconut, olive or avocado oil. Seriously, you need to dump the margarine! Also, instead of cream cheese, how about goat cheese? That is so good! Next, instead of sour cream, I'd use Greek yogurt. It is much better for you with loads of protein, less fat and therefore much healthier than sour cream (low fat or not). And last but not least, how about FRESH spinach instead of frozen? It is so easy to saute fresh spinach and mushrooms there is no reason to use frozen. Most of all, FRESH tastes BEST!
