Our Mini Cauliflower Bites are packed with the fresh veggie flavors that you love. Serve them up next to your favorite grilled meats, or warm up a few as an afternoon snack. No matter what time of day you eat these low-carb bites, we bet you'll love these just as much as we do!  

What You'll Need

  • 4 cups cauliflower florets
  • 1/2 red or yellow bell pepper, finely chopped
  • 1 egg
  • 3/4 cup shredded reduced-fat mozzarella cheese
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. Preheat oven to 375 degrees F. Coat two mini muffin pans with cooking spray.
  2. In a food processor, pulse cauliflower until finely chopped. Place cauliflower in a large bowl; add red bell pepper, egg, 1/2 cup mozzarella cheese, the flour, garlic powder, onion powder, Italian seasoning, salt, and pepper; mix until thoroughly combined.
  3. Spoon cauliflower mixture evenly into muffin pans and sprinkle remaining mozzarella cheese on top. Bake for 25 to 30 minutes, or until golden brown. Let cool slightly, then serve.

Any substitution for egg and cheese. I'm not vegetarian but I just don't do well with any dairy.

can I freeze these?

Hi Receipe sounds good. Only thing,I do not have a food processor my blender is not that great. Can I just try chop the cauliflower small?

Hi there! If you do not have a food processor it's okay to chop the cauliflower in this recipe. Make sure to chop it finely and you'll have the same outstanding results. Enjoy!

Also, although a little more expensive, you can buy already chopped cauliflower in the produce dept with the bagged salad. Not everyone carries it, but it's so much easier than chopping by hand.

Why is this something you would ask from a recipe development site? Just make the recipe in a way that works for you instead of operating from fear. If you're an experienced cook, this should be a no-brainer. If not, perhaps another site would be more your speed.
