Parmesan-Basil Tomato Bake

Many restaurants serve baked tomatoes as a colorful, edible garnish to a main dish meal. But they're really so good, they deserve to be considered a side dish, and one that is perfectly acceptable on a diabetes diet. Our Parmesan-Basil Tomato Bake is so delicious you'll wonder why you never made it before!

What You'll Need

  • 2 slices light-style wheat bread
  • 4 tomatoes, halved
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon dried basil

What to Do

  1. Preheat oven to 375 degrees F.

  2. Process bread in blender, one slice at a time, to make soft breadcrumbs.

  3. Arrange tomato halves in shallow baking pan. Mix breadcrumbs, cheese, and basil and sprinkle over tomato halves.

  4. Bake 15 to 20 minutes, or until topping browns.
