Stuffed Artichokes

Stuffed Artichokes

Unlock your secret chef alter ego when you easily throw together these Italian style stuffed artichokes like a pro! You won't believe how simple it is to make restaurant style stuffed artichokes at home!

Serves: 4

Cooking Time: 1 hr 8 min

What You'll Need:
  • 4 large artichokes, trimmed
  • 1/4 teaspoon salt
  • 1/4 cup olive oil, divided
  • 4 tablespoons (1/2 stick) butter
  • 1 onion, chopped
  • 2 teaspoons minced garlic
  • 1 cup Italian-flavored bread crumbs
  • 1 teaspoon grated Parmesan cheese
What To Do:
  1. Place artichokes and salt in a large pot and fill pot with just enough water to cover artichokes. Bring to a boil over high heat and cook 35 to 40 minutes, or until artichokes are tender.
     
  2. Remove artichokes and allow to drain upside down; place in an 8-inch square baking dish and set aside.
     
  3. Preheat oven to 375 degrees F.
     
  4. In a medium skillet, heat 3 tablespoons oil and butter over medium heat; add onion and garlic. Cook 3 minutes, or until onion is tender. Remove from heat and stir in bread crumbs and Parmesan cheese.
     
  5. Spread artichoke leaves apart and fill spaces between leaves with stuffing mixture. Drizzle remaining 1 tablespoon olive oil over artichokes. Cover tightly with aluminum foil and bake 15 to 20 minutes, or until hot. Serve immediately.
Notes

For added flavor, squeeze half of a lemon into the boiling water with the artichokes. They’re easy to eat – just pull off each artichoke leaf and eat the stuffing as well as the artichoke pulp by removing it with your teeth.
