Veggie-Lover's Delight brings together the summer's best veggies that will go great with any main dish you're cookin' up! Plus, a dash of fresh dill takes this over the top!

What You'll Need

  • 1 (6-ounce) package baby carrots
  • 3 tablespoons butter
  • 3 zucchini, cut into 1-inch chunks
  • 3 yellow squash, cut into 1-inch chunks
  • 1 tablespoon chopped fresh dill weed
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

What to Do

  1. Place the carrots in a medium saucepan and add just enough water to cover them. Bring to a boil over medium-high heat and cook for 8 to 10 minutes, or until fork-tender; drain.

  2. In a large skillet, over medium heat, melt the butter and add the carrots and remaining ingredients. Stir until well combined. Cook for 6 to 8 minutes, or until the vegetables are tender.

Notes

To give this extra flair, add a sprig of dill weed just before serving. It's a great way to welcome summer!
