Decadent layer bars get a diabetic-friendly makeover in our recipe for Seven Layer Bars. Each layer of this yummy diabetic dessert recipe is loaded with goodness. We're talking the chocolatey-nutty-gooey kind of goodness!

What You'll Need

  • 1/2 cup (1 stick) margarine, melted
  • 1 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup + 2 tablespoons chopped walnuts, divided
  • 1 1/4 cup sugar-free chocolate chips, divided
  • 1/3 cup skim milk
  • 1/2 cup sugar-free caramel sauce
  • 1/4 cup shredded coconut

What to Do

  1. Preheat oven to 350 degrees F. Coat an 8- x 8-inch baking dish with cooking spray.
  2. In a medium bowl, combine margarine, flour, cinnamon, and 1/2 cup walnuts; mix well. Press dough into baking dish. Bake 10 minutes, or until a firm crust forms; let cool.
  3. In a medium bowl, place 1 cup chocolate chips. In a small saucepan over medium heat, heat milk until hot. Pour over chocolate chips and mix until smooth. Place in refrigerator for 10 minutes to thicken. Spread chocolate over crust.
  4. Sprinkle 1/4 cup walnuts over chocolate, then drizzle with caramel sauce. Sprinkle remaining chocolate chips, coconut, and 2 tablespoons of walnuts on top. Refrigerate 4 hours, or until set. Cut into bars.
