Tarragon Pot Roast

The consummate comfort food has to be a fork tender pot roast. Our Tarragon Pot Roast turns homey into restaurant-fancy, and, of course, keeps your diabetes diet in mind.

What You'll Need

  • 1 three-pound very lean beef bottom round roast
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 1/2 cup dry red wine
  • 1/2 cup water
  • 1 tablespoon minced garlic
  • 1 tablespoon dried tarragon
  • 1/2 teaspoon black pepper

What to Do

  1. Preheat the oven to 325 degree F. Coat a roasting pan with nonstick cooking spray and place the roast in the pan.

  2. In a medium bowl, combine the remaining ingredients and pour over the roast. Bake for 1-1/2 to 2 hours, or until the meat is fork-tender.

  3. Slice, and serve topped with the sauce from the pan.
