What You'll Need

  • 1 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup low-fat vanilla yogurt
  • 2 ripe bananas, mashed
  • 2 tablespoon vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract

What to Do

  1. Preheat the oven to 400 degrees. Coat an 8-inch square baking dish with cooking spray.

  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt; mix well. Add the yogurt, bananas, oil, egg, and vanilla; mix until well blended, then spread into the baking dish.

  3. Bake for 22 to 25 minutes, or until golden and a wooden toothpick inserted in the center comes out clean.
