Creamy fudge recipes are perfect for any time of the year. This ooey, gooey Rich & Creamy Fudge will go a long way in satisfying your sweet tooth. Make it for the next potluck or get-together. No one will ever think that they're lightened up for a diabetic-friendly diet! This quick and easy recipe is so delicious, it'll become one of your favorite anytime desserts! 

What You'll Need

  • 1/4 cup margarine
  • 2 ounce unsweetened chocolate (2 squares)
  • 1 cup granulated Splenda
  • 1 teaspoon vanilla extract
  • 8 ounce reduced-fat cream cheese
  • 1/2 cup chopped nuts (optional)

What to Do

  1. Coat an 8-inch square baking dish with cooking spray.
     
  2. In a saucepan, melt margarine over low heat. Add chocolate and stir until melted.
     
  3. Remove from heat and add Splenda and vanilla; stir until well mixed. Pour into a large bowl. Add cream cheese and beat until smooth.
     
  4. Stir in nuts, if desired, and spread into prepared baking dish.
     
  5. Refrigerate 1 hour or until firm.

There's a theory that says the origin of fudge came from someone "fudging up" some caramels. Hence the name fudge. Pretty interesting!
