Our baked Lime-Kissed Chicken Breasts get their full-flavor from a homemade marinade we make from lots of healthy ingredients. This one is super easy for a family meal… as well as being a great one for company too!
What You'll Need
- 1/3 cup reduced-sodium soy sauce
- 1/2 teaspoon finely grated lime peel
- 1 tablespoon lime juice
- 1/2 teaspoon ground ginger
- 3 tablespoon water
- 4 (4-ounce) boneless, skinless chicken breast halves
What to Do
- In a small saucepan, combine soy sauce, lime peel, lime juice, ginger, and water; boil mixture 1 minute. Cool marinade to room temperature.
- Pour cooled marinade over chicken breasts. Cover and refrigerate several hours.
- When ready to bake, preheat oven to 350 degrees F. Coat a baking dish with cooking spray. Pour off marinade and discard.
- Cover and bake chicken in prepared baking dish 45 minutes, or until chicken is tender and juices run clear. Turn oven to broil, uncover, and brown chicken breasts 5 minutes per side.
