Flourless Apple Pie Cookies

You don't have to bake up a whole pie to enjoy the taste of classic apple pie! With our recipe for Flourless Apple Pie Cookies you can easily enjoy that fall-favorite taste anytime, while still sticking to your diabetes diet!

What You'll Need

  • 1/2 cup roasted almond butter
  • 2 tablespoon brown sugar
  • 2 tablespoon honey
  • 1 large egg
  • 1 cup oat flour (See Note)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup grated apple
  • 1/4 cup chopped walnuts (optional)

What to Do

  1. Preheat oven to 350 degrees F. Coat 2 baking sheets with cooking spray.
  2. In a large bowl, beat almond butter, brown sugar, honey, and egg until smooth. Add oat flour, baking soda, cinnamon, and salt; mix until combined. Stir in apple and walnuts. Place heaping teaspoonfuls of batter onto baking sheets.
  3. Bake 8 to 10 minutes, or until firm to the touch. Let cool 5 minutes, then remove to a wire rack to cool completely.

Notes

  • To make oat flour, place old-fashioned or quick oats in a food processor or blender and pulse until it reaches a flour consistency.
     
  • Sprinkle cookies with confectioners' sugar for an extra special treat.
