Egg Nests

Have you heard of the trendy new recipe called Egg Nests? We place an egg yolk on top of an egg white mixture that's light and fluffy...just like a cloud! This simple breakfast recipe is easy enough to make on any morning, or to impress guests with.

What You'll Need

  • 2 eggs
  • 1/8 teaspoon salt
  • 2 tablespoon grated Swiss cheese

What to Do

  1. Place oven rack in center of oven and preheat to 450 degrees F. Line a baking sheet with parchment paper.
  2. Separate egg yolks from whites and place whites in a medium bowl. Keep each egg yolk in a separate bowl.
  3. Add salt to egg whites and beat with an electric mixer starting on low speed and increasing to high speed, until stiff peaks form. Gently fold in cheese, making sure not to deflate egg whites.
  4. Create 2 mounds of the egg white mixture on prepared baking sheet so they look like nests, with indentations in the centers.
  5. Bake 3 minutes, then gently add egg yolk to center of each nest and bake 3 more minutes, or until desired doneness of yolk. Serve immediately.
