Lemon Italian Ice

Because we keep Lemon Italian Ice frozen, we can pull it out whenever we need a refreshing snack. Serve it up at your next backyard bash, poolside, or as a light after-school or anytime pick-me-up.
What You'll Need
- 2 cup water
- 3/4 cup fresh lemon juice
- 3/4 cup sugar
- 2 teaspoon grated lemon peel
What to Do
- In a medium saucepan, combine all the ingredients. Bring to a boil over medium heat, stirring constantly. Remove from the heat and allow to cool for 5 minutes.
- Pour the mixture into 2 ice cube trays. Cover and freeze overnight.
- Remove frozen mixture from the trays and pulse in a food processor or blender for 2 to 3 minutes, or until the consistency is thick and creamy. Serve, or cover and freeze until ready to serve.
- Makes 9 servings at a 1/3 cup serving size.
