Autumn Apple Dream

Dreaming of using up that bounty of tree-fresh autumn apples you brought home from the market? Well, our Autumn Apple Dream cooks up quick on your stove-top, and yes this sweet dessert fits your diabetes diet!

What You'll Need

  • 1/2 cup water
  • 2 apples, peeled, cored, and coarsely chopped
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoon lemon juice

What to Do

  1. In a medium saucepan, combine water, apples, brown sugar, and cinnamon. Bring to a boil and reduce heat to low. Simmer, covered, about 20 minutes, or until apples are soft. 

  2. Remove apples from pan and bring liquid to a boil. Reduce heat to medium and cook until liquid thickens. Return apples to saucepan and stir in lemon juice; heat through and serve.
