Ham and Edamame Chop Salad

This salad packs an extra punch of protein thanks to nutritious edamame! Plus, since it's loaded with other goodies, like ham, cheese, and fresh veggies, this Ham and Edamame Chop Salad from the "Diabetes Carb Control Cookbook" is a super choice when you're looking for a healthy and filling salad recipe.

What You'll Need

  • DRESSING
  • 1/4 cup light mayonnaise
  • 1/4 cup fat-free sour cream
  • 1 medium garlic clove, minced
  • 2 teaspoon cider vinegar
  • 1 tablespoon dried dill weed
  • __BLANK__
  • SALAD
  • 6 cup chopped Romaine lettuce
  • 1 cup fresh shelled edamame
  • 4 ounce extra-lean diced ham
  • 1/2 cup diced green bell pepper
  • 1/2 medium cucumber, peeled and chopped
  • 1/3 cup diced red onion
  • 2 ounce very thinly sliced reduced-fat Swiss cheese, torn in small pieces
  • 2 large hard boiled eggs, peeled and halved

What to Do

  1. In a small bowl, stir together the dressing ingredients.
  2. In a large bowl, combine the salad ingredients, except the eggs. Cut the eggs in half, discard two yolk halves, and chop the remaining eggs. Add eggs to the salad with the dressing and toss until well coated.
