Minty Chicken Salad

Fresh mint is a terrific way to perk up practically any dish! In fact, with the fresh taste of mint in our Minty Chicken Salad, we don't need heavier ingredients like mayonnaise or sour cream, which lets you enjoy this salad guilt-free!

What You'll Need

  • 2 cup cooked, chunked chicken breast
  • 1/2 yellow bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 cup cubed cucumber
  • 1/2 cup (2 ounces) reduced-fat crumbled feta cheese
  • 1/4 cup chopped fresh mint
  • 2 tablespoon fresh lemon juice
  • 1 1/2 teaspoon olive oil
  • 1 teaspoon dried oregano*
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10-ounce) package mixed lettuce greens

What to Do

  1. In a large bowl, combine all the ingredients except the mixed lettuce greens; toss until well combined.

  2. Place the mixed greens on a platter and top with the chicken mixture. Serve immediately, or cover and chill until ready to serve.

Notes

*To make this a gluten-free recipe, use seasonings with no added starch from a gluten-containing source.
