Lemon Cream and Blueberry Parfaits

These Lemon Cream and Blueberry Parfaits are exactly what you crave when it's hot and sticky out. The citrus is so refreshing, and the blueberries provide plenty of good-for-you anti-oxidants. Plus, it's so healthy, you could even eat it for breakfast!

What You'll Need

  • 3/4 cup non-fat vanilla Greek yogurt
  • 4 ounce reduced-fat cream cheese, softened
  • 1 teaspoon honey
  • 2 teaspoon grated lemon zest
  • 2 cup fresh blueberries

What to Do

  1. In a medium bowl, combine yogurt, cream cheese and honey with an electric mixer at high speed. Beat until light and creamy. Stir in lemon zest.
  2. In four parfait glasses or wineglasses, layer the lemon cream and blueberries. If not serving immediately, cover and refrigerate until ready to serve.
