While desserts from the bakery aren't always the best option if you're following a diabetic diet, that doesn't mean you'll never get to enjoy your favorites again. With our recipe for Mini Eclair Bites, you can savor the sweet goodness of a classic bakery treat without going overboard.

What You'll Need

  • 2 cup reduced-fat graham cracker crumbs
  • 1/2 cup confectioners' sugar
  • 1 1/2 stick margarine, melted
  • 1 (4-serving size) package sugar-free instant French vanilla pudding mix
  • 1 1/4 cup lowfat milk
  • 2 cup fat-free frozen whipped topping, thawed
  • 3/4 cup sugar-free chocolate frosting

What to Do

  1. Preheat oven to 350 degrees F. Line 18 mini-muffin cups with paper liners.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and butter; mix well. Evenly press mixture into paper liners. Using your fingers, press over bottom and up sides of liners.
  3. Bake 5 minutes, or until crust begins to brown. Remove from oven and cool completely.
  4. In a medium bowl, whisk pudding mix and milk. Fold in whipped topping. Place in a resealable plastic bag and snip off one corner. Fill graham cracker crusts evenly with pudding mixture.
  5. In a small microwave-safe bowl, heat frosting 10 to 15 seconds; stir until smooth and pourable. Place in a small resealable plastic bag and snip off one corner. Top pudding mixture with a dollop of chocolate frosting. Refrigerate 4 hours or until ready to serve.
