Grilled Chicken Salad

Our version of Grilled Chicken Salad over a bed of crunchy romaine lettuce, boasts a diabetes-friendly A-OK Caesar Dressing to drizzle over it. Our Mr. Food Test Kitchen outdid themselves with that one!

What You'll Need

  • 6 cup torn romaine lettuce
  • 2 (4-ounce) boneless, skinless chicken breast halves, grilled or broiled, cut into thin strips
  • 2 tablespoon grated Parmesan cheese
  • 2 tablespoon A-OK Caesar Dressing (see Note)

What to Do

  1. Divide lettuce evenly among 4 plates and top with chicken strips and cheese. Drizzle with dressing and serve.

Notes

NOTE: To make your own A-OK Caesar Dressing, in a small bowl, stir together 1/3 cup fat-free mayonnaise, 2 tablespoons lemon juice, 2 teaspoons white cooking wine, and 1 teaspoon Dijon-style mustard. Chill until ready to use. Makes 1/2 cup.
