Tuna Stuffed Tomatoes

There's something really fun and eye-catching about serving your dish in a bright and vibrant tomato dish; is screams fresh! That's why we love these low-carb Tuna Stuffed Tomatoes; we wanted a creative, garden-fresh way to enjoy tomatoes alongside creamy, flavorful tuna salad and now that we have one, we're sharing it with you! Your family's faces will light up when they see their lunch served in the last way they were expecting...in a bowl they can eat! 

What You'll Need

  • 3 large firm ripe tomatoes
  • 1 package (7-ounce) solid white albacore tuna in water, drained
  • 1/3 cup reduced-fat mayonnaise
  • 1/2 cup chopped celery
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely chopped fresh parsley
  • 1/8 teaspoon black pepper

What to Do

  1. Cut off about one-third of stem end of each tomato. Carefully scoop out tomato flesh.

  2. In a medium bowl, combine remaining ingredients.

  3. Mound one-third tuna mixture into each tomato cup. Chill until ready to serve.

Notes

Need to know how to hollow out a tomato? No worries!

Just cut the tomato in half or cut a slice off the top. Then, gently scoop out the seeds and pulp with a spoon. Place the tomato shell upside down on paper towels to drain for at least 10 minutes, and then get to stuffing!
