Zippy Cucumber Crunch

If you like your cucumbers to have a little crunch to 'em then you're going to love this cucumber salad recipe. Our Zippy Cucumber Crunch is crunchy, creamy, tangy, and full of delicious tastes!

What You'll Need

  • 2 large cucumbers, peeled, sliced, and slices cut in half
  • 1 teaspoon salt
  • 3 cup ice water
  • 4 scallions, thinly sliced
  • 1/2 red bell pepper, cut into 1/4-inch slivers
  • 1/4 cup reduced-fat sour cream
  • 1 tablespoon white vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon black pepper

What to Do

  1. In a large bowl, combine the cucumbers, salt, and ice water.  Cover and chill 1 hour, then drain and return cucumbers to the bowl.
     
  2. Add remaining ingredients and mix until well combined.  Cover and chill at least 2 hours before serving.
