Hunter's Stew

Did you know that Hunter's Stew is another name for Chicken Cacciatore, which is an Italian dish with chicken and vegetables, all cooked in one big pot? One pot means minimal clean-up. What's not to love?

What You'll Need

  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 1/2 pound boneless, skinless chicken breast halves, cut into cubes
  • 4 tablespoon canola oil
  • 1 large green bell pepper, chopped
  • 1 pound fresh mushrooms, quartered
  • 1 large onion, chopped
  • 2 clove garlic, minced
  • 1 (28-ounce) jar reduced-sodium spaghetti sauce
  • 1 3/4 cup reduced sodium beef broth
  • 1 (28-ounce) can reduced-sodium diced tomatoes, undrained

What to Do

  1. In a shallow dish, combine 1/2 teaspoon salt, the black pepper, and flour. Roll chicken in flour mixture, until well-coated.
     
  2. In a large pot, heat 3 tablespoons oil over high heat until hot; brown chicken on all sides for 5 minutes. Remove from pot; set aside. Add green pepper, mushrooms, onion, garlic, and remaining 1 tablespoon oil to pot and cook 5 minutes, or until onions are tender, stirring occasionally. 
     
  3. Add remaining ingredeints, including remaining 1/2 teaspoon salt; return chicken to pot and bring to a boil. Reduce heat to low and simmer 30 minutes, or until chicken is fork-tender, stirring occasionally.
