Homemade Pork Meatballs

These Homemade Pork Meatballs are easy to make and still chuck full of flavor! Tell your family not to run off, because dinner will be ready in a flash. Team them up with our Light 'n' Hearty Pasta Sauce for a tasty diabetic-friendly recipe duo.

What You'll Need

  • 1/4 cup liquid egg substitute
  • 1 slice light-style wheat bread, torn in small pieces
  • 3/4 pound lean ground pork
  • 2 cup low-sodium beef broth
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. In a medium bowl, combine everything except beef broth; mix well. Shape into 10 (2-inch) meatballs.
     
  2. In a large saucepan, bring 2 cups broth to a boil. Carefully add meatballs with tongs. Reduce heat to low, cover, and simmer 20-25 minutes, or until no pink remains, stirring occasionally.
