Hungarian Pork Goulash

Want to cook up a dinner that'll satisfy everyone's rumbling bellies? How about making this hearty, Hungarian Pork Goulash? Saucy and full of veggies, this low-carb dish will soon become a dinnertime favorite!

What You'll Need

  • 1 tablespoon Hungarian or Spanish paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pound pork sirloin roast, trimmed and cut into 1/2-inch chunks
  • 1 tablespoon canola oil
  • 1 cup chopped onions
  • 1 carrot, peeled and thinly sliced
  • 1 stalk celery, sliced
  • 1 (14-1/2-ounce) can no-salt-added diced tomatoes
  • 1/2 cup water
  • 2 tablespoon reduced-fat sour cream

What to Do

  1. In a medium bowl, combine paprika, garlic, salt, and pepper. Add pork and toss until evenly coated.
  2. In a soup pot over high heat, heat oil. Add pork and onions; cook 5 to 7 minutes, or until meat is browned. Add carrot, celery, tomatoes, and water.
  3. Cover, reduce heat to low, and simmer 1-1/4 to 1-1/2 hours, or until pork is tender. Serve with a dollop of sour cream.
