Cheesy Brown Rice

We all know that brown rice is the better choice, but sometimes, you want a little kick to go along with it. With shredded Cheddar and some chopped green chilies, our Cheesy Brown Rice is just the ticket. You'll never go back to bland, boring rice again!

What You'll Need

  • 2 1/4 cup reduced-sodium vegetable broth
  • 1 cup brown rice
  • 1 (4-ounce) can chopped green chilies
  • 1/2 cup reduced-fat shredded Cheddar cheese

What to Do

  1. In a large saucepan, bring broth to a boil. Stir in rice and reduce heat to low; simmer about 1 hour, or until rice is tender.

  2. Stir in chilies and cheese. Remove from heat, cover, and let stand about 5 minutes, or until cheese is melted.
