Garden-Fresh Burgers

Rain or shine, broiled or grilled, whatever the occasion, these year-round Garden-Fresh Burgers will never go out of style!

What You'll Need

  • 3/4 cup dry bread crumbs, divided
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 2 clove garlic, minced
  • 1 teaspoon dried thyme
  • 3 cup warm cooked brown rice
  • 1 medium carrot, peeled and grated
  • 1/3 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoon light soy sauce
  • 2 eggs

What to Do

  1. Preheat the broiler. Coat a rimmed baking sheet with nonstick cooking spray. Place 1/2 cup bread crumbs in a shallow dish; set aside.

  2. In a large nonstick skillet, heat the oil over medium-high heat. Sauté the onion, garlic, and thyme for 4 to 5 minutes, or until the onion is tender; transfer to a large bowl.

  3. Add the remaining ingredients except the reserved bread crumbs; mix well.

  4. Form the mixture into six 1/2-inch-thick patties and coat with the reserved 1/2 cup bread crumbs. Place on the baking sheet and broil for 6 to 7 minutes per side, or until golden and heated through.
