What You'll Need

  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 clove garlic, minced
  • 1 cup Arborio rice
  • 2 cup cubed butternut squash
  • 2 1/2 cup reduced-sodium vegetable broth
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

What to Do

  1. In a large skillet over medium heat, heat oil and cook onion and garlic 3 to 5 minutes, or until translucent. Add rice and heat for 3 minutes, stirring occasionally.
