Our Three Bean Chili is the perfect answer for those who are looking for a meatless meal every now and then. With plenty of beans and lots of good-for-you veggies, this chili is as hearty and healthy as they come!

What You'll Need

  • 1 (15-ounce) can red kidney beans, rinsed and drained
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can garbanzo beans, rinsed and drained
  • 2 large onions, chopped
  • 1 large red bell pepper, chopped
  • 1 large green bell pepper, chopped
  • 2 (14-1/2-ounce) cans no-salt-added diced tomatoes, undrained
  • 1 (14-1/2-ounce) can reduced-sodium vegetable broth
  • 2 tablespoon minced garlic
  • 3 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 cup cilantro leaves, roughly chopped

What to Do

  1. In a 4- to 5-quart slow cooker, combine all ingredients except cilantro. Cover and cook on HIGH for 3 to 4 hours (or LOW for 7 to 8 hours). Stir in cilantro and serve.
