There's nothing like a hearty, steaming bowl of soup to satisfy and comfort. That's why our delicious, creamy Baked Potato Soup might be just what you need!

What You'll Need

  • 1/4 cup chopped onion
  • 1/2 cup chopped celery
  • 1 (10-3/4-ounce) can Healthy Request Cream of Celery Soup
  • 1 (12-ounce) can evaporated nonfat milk
  • 2 cups diced unpeeled baked potatoes
  • 2 tablespoons bacon bits
  • 3/4 cup shredded reduced fat Cheddar cheese
  • 1/4 teaspoon black pepper

What to Do

  1. Coat a large saucepan with cooking spray. Over medium-high heat, saute onion and celery 5 minutes, or until tender.
  2. Add celery soup. evaporated skim milk, potatoes, and bacon bits; mix well to combine. Lower heat and simmer 10 minutes, stirring occasionally. Stir in Cheddar cheese and black pepper and continue to simmer 5 minutes, or until cheese is melted, stirring often.

Notes

  • To make this Baked Potato Soup recipe gluten-free, use a gluten-free cream of celery soup.

will this soup be on the thick side that's what i am looking for. It seems simple enough for an older man to make that burns water when he boils so ill give this a shot
