Cool Cucumber Soup

What a refreshing way to start a meal! You and your kitchen will be "cool as a cucumber" when you whip up smooth 'n' creamy chilled Cool Cucumber Soup. It just might be the way to get the kids (and everybody) to eat their veggies!

What You'll Need

  • 4 large cucumbers, peeled, seeded, and chopped
  • 1 (16-ounce) container low-fat plain yogurt
  • 1 garlic clove
  • 1/4 teaspoon dried dill weed
  • 1 teaspoon salt

What to Do

  1. In a blender or food processor, puree all ingredients until smooth, scraping down sides of blender as necessary.
     
  2. Transfer to a large bowl, cover, and chill for at least 2 hours before serving. Serve chilled.

Note

For an extra-sweet touch, add 1 tablespoon honey to the ingredients. And it's nice to garnish each bowl of soup with a cucumber slice and a few sprigs of fresh mint.
