Down-Home Veggie Soup

Our homemade vegetable soup comes packing a Southern favorite - okra! That's what gives our light and healthy Down-Home Veggie Soup a tasty change-of-pace flavor.

What You'll Need

  • 1 (12-ounce) package frozen chopped onion, celery, bell pepper, parsley blend
  • 3 cup reduced-sodium, fat-free chicken broth
  • 1 (14-1/2-ounce) can diced tomatoes with basil, garlic, and oregano
  • 1 (12-ounce) package frozen cut okra

What to Do

  1. Coat a large skillet with cooking spray. Over medium-high heat, cook onion mixture until tender, stirring occasionally.

  2. Add broth and tomatoes and bring to a boil. Add okra, reduce heat to medium, and simmer, uncovered, 15 to 20 minutes, or until okra is tender.
